If you can relate, you understand how frustrating it can be to try to get a child to eat. That’s why sometimes I have to get a little creative by making snacks and meals that are fun and appealing- and it never hurts to get my son involved in the process.

One of our favorite snacks is some homemade white cheddar popcorn with some dried cranberries to sweeten it up and make it look a bit more festive.

Holiday White Cheddar Popcorn

Ingredients:
8 cups of air-popped popcorn
1 tablespoon of melted coconut oil
1/2 teaspoon of salt
1/2 cup of finely grated Parmesan
1/4 cup of dried cranberries (or Craisins)

Directions: Make your popcorn according to your popcorn machine’s instructions.  In a large bowl, drizzle the coconut oil over the popcorn and toss to coat evenly.  Sprinkle with sea salt and Parmesan.  Again, tossing to cover the popcorn with the seasoning.  Lastly, mix in your dried cranberries.
