Shake ingredients with ice and pour into a very chilled cocktail glass. Garnish with either a lemon twist or an olive.
You can try experimenting with your quantities of gin and vermouth: more vermouth makes a ‘wetter’ drink; more gin dries it out.

50ml Pimm’s Blackberry & Elderflower
Champagne
Place the Pimm’s Blackberry & Elderflower in a flute and top with fizz (Prosecco, or – if you’re going all out, Champagne).
For a final fruity flourish, top with a twist of lemon peel.
Twinkle
25ml vodka
15ml elderflower cordial
Champagne
Add the vodka and elderflower to a cocktail shaker filled with ice (see tips), seal and give a short sharp shake. Double strain into a large coupette, top up with champagne and garnish with a long lemon twist.
