Protein Pancakes

(serves 1)

Ingredients:

1/4 cup egg whites

1/2 ripe banana

1 scoop protein powder (approximately 23 grams)

1/4 teaspoon cinnamon

Directions: Mash the banana with a fork in a small bowl.  Add in the protein powder, cinnamon, and egg whites and blend until the mixture is the same consistency as pancake batter.  If you find that the mixture is too dry, add in about a tablespoon of almond milk.  Coat your skillet with canola oil spray and pour the batter in.  Let it cook on medium for about three minutes or until the batter starts to bubble.  Flip the pancake over and cook the other side for about two minutes.  Top with maple syrup, honey, fruit, or any of your favorite toppings.

I make this pancake for breakfast nearly every morning.  It is easy, surprisingly quick, filling, and a tasty way to work some protein into my day.  Leave a comment if you try it for yourself!
